Skyler’s Fancy Carmel Apple Pie Holiday Recipe

Ingredients 

Fun shaped cookie cutter (Turkey, Fall themed etc.) 

Filling

2 Green Granny Smith apples (Peeled/diced) 

3 Red Delicious Apples (Peeled/diced) 

1/3 c. Carmel sauce

1/4 c. chopped pecans (Optional) 

1 stick unsalted butter

1 tbsp cornstarch

Cinnamon & Sugar (to taste, generally 2-3 tbsp sugar & 1/2-1 tbsp cinnamon) 

Crust: 

Butter (1 stick–CHILLED/cubed) 

2 1/2 c. all-purpose flour

1 tsp salt

1/2 c. ice cold water

1 egg white (whisked) 

1. Whisk flour & Salt together in large bowl 

2. Add butter, cut butter into mixture with pastry cutter (or two forks) until resembles coarse meal. Do not overwork ingredients

3. Drizzle cold water in, 1 tbsp at a time, stir with rubber spatula or wooden spoon. Stop adding water when the dough begins to form large clumps. Do NOT add more water than you need. (will vary depending on weather) 

4. Transfer to floured work surface. Form into a ball, cut in half. Gently roll out 1/2 into pie crust save other half for the topper. 

5. Pop in preheated oven for 5-8 minutes to slightly cook 

6. Remove from oven set aside for filling (TIP: when you are done putting together you can wrap edge with foil to prevent burning… I’ve heard… ) 

Filling: 

1. Mix diced apples with a little lime juice (to prevent oxidation), cornstarch, sugar & cinnamon

2. Pour into pie crust, drizzle the caramel sauce & pecans over the apples

3. Using a cheese grater, grate butter evenly over the top of filling

4. Roll out pie crust and cut strips to weave topper, cut fun shapes with the cookie cutters & have fun with the design. 

5. using a pastry brush coat top with egg white (for that golden color) 

Bake 35-40 minutes at 350.
